Whether you love it or hate it, Meghan Sussex’s new Netflix series has got everyone talking. So, we’re putting one of her most controversial recipes to the ultimate test. After it sent the internet into a spin, with one critic dubbing it ‘a crime against Italy’, ‘Clodagh’s in the kitchen making Meghan’s skillet spaghetti.
Single Skillet Spaghetti
Serves 2
Ingredients
Small bunch of mixed rainbow chard and kale
400g mixed cherry tomatoes, sliced in half
Sea salt
3 tbsp olive oil
3 garlic cloves, roughly chopped
175g dried spaghetti
Finely grated zest of 1 large lemon
50g grated Parmesan
Pinch of dried chilli flakes
Handful of rocket leaves
To garnish:
Extra parmesan
Basil leaves
Sea salt
Method
1. Tear the leaves off the chard and kale stalks. Finely chop the stalks and roughly rip the leaves.
2. Place the tomatoes in a pan, season with salt, drizzle over the oil and add the garlic and spaghetti.
3. Add the lemon zest to the pan with the spaghetti along with the chopped kale and chard stalks then pour over enough boiling water to just cover everything.
4. Bring to the boil then cover the pan with a lid, reduce the heat to a simmer and cook for 6 minutes, stirring occasionally.
5. Remove the lid and gently stir in the torn up chard and kale leaves and cook for a further 3-4 minutes to wilt them and let the liquid evaporate.
6. Before serving, stir in the parmesan, chilli flakes and rocket.
7. Ladle a little of the sauce into each serving bowl. Using tongs or a fork, twist some of the spaghetti into a spiral then use a large spoon to carefully transfer it to the serving bowls.
8. Finish with extra parmesan, basil leaves and a sprinkle of sea salt.
