Cinnamon Protein Balls:
3 c. oatmeal
1 c. protein powder (vanilla or cinnamon roll)
1 c. peanut butter
1 c. honey
¾ c. mini chocolate chips
4 tsp. cinnamon
Mix together and roll into 1 tbsp. sized balls.
Make the glaze:
4 oz. cream cheese
1/3 c. maple syrup
1 tsp. vanilla
Dip one side of each ball in cream cheese mixture, or warm up and drizzle across top. These store great in the freezer.
Cheese Crisps (my method:)
Cut sliced cheese into quarters. Punch holes in the middle if you want. Place on a lined baking sheet, giving a little space for melting in between. Sprinkle with coarse salt, season salt, and garlic powder. Place in the oven at 350° until edges turn brown. Allow to cool then remove from sheet and place on a paper towel. Store in fridge.
Broiled Granola (based on a recipe from Food From the Heart)
½ c. butter
1 c. brown sugar
1 tsp. cinnamon
½ tsp salt
2 tsp. vanilla
Turn oven on broil, (low broil if you have the option.) Spray 2 baking sheets with oil.
In a sauce pan melt butter and add brown sugar, cinnamon, and salt. Bring to a boil and stir for 1 minute.
Remove from the heat and add vanilla to incorporate.
In a mixing bowl, stir together
4 c. whole oats
1 c. slivered almonds
1 c. shredded sweetened coconut
Pour butter mixture over dry ingredients and stir/massage together until full incorporated.
Divide between two baking sheets and place one under the broiler for a minute or two until you start to notice a color change. Pull out of oven and replace with other pan. While second pan is browning slightly for 1 minute, stir the first pan. Then swap pans and stir the second one. Continue 3 more times until everything has a chanced to be toasted. Sprinkle with mini chocolate chips while still hot and leave in a mountain to cool. Once cooled store in an airtight container and use as a cereal or to top parfaits. After you get good at this recipe feel free to customize as you like!

I love a good cooking video from Megan! I'm definitely craving anything lemon blueberry.
For using up ground beef: Cheeseburger casserole
Peel and chop potatoes bite size
Boil potatoes until soft
Brown Ground beef season to your liking (whatever seasoning g you would put on your burgers. I like Kinders Buttery Steakhouse)
Put ground beef in bottom of greased casserole dish
Drizzle with heavy whipping cream (not a lot)
Top with cooked potatoes
Salt and pepper on top of the potatoes
Top with cheese
Cook at 425 until cheese bubbly
Serve with ketchup, mustard, pickles, lettuce etc
Just 4 months to go! And then you can add one more to your rollerblading team. lol

Hey Megan, Wow! those muffins look so AMAZING! And the small little card tucked into the sweet wrap is so precious. You are so talented!
We make a dish with 2-lb Ground beef, 2-lb Sausage,cooked together with 1-cup chopped onions, tablespoon Garlic cook and then add a half shredded Cabbage and Soy sauce to taste (The less salt bottle)
We eat this with Pita chips, so so good! You can add other things to yours, sometimes I add shredded carrots! If you have left overs freeze and use at another time or share with family! Best little Family ever! ❤️
Do the cheese crisps stay crispy if you store them in the fridge
One year for my eldest son’s birthday I filled a small grocery bag with the “junk snacks” he would crave but I NEVER bought…pop tarts, Lucky Charms etc …it was one of his gifts…he totally appreciated that “brown bag” birthday gift. I got two of every item so he wouldn’t need to share with his younger brother ❤

I have always made a “lazy overnight granola “ for the reason you describe- it’s a lot of hands on over a long period of time and I am likely to forget and burn it. But, I love this idea. Can’t wait to try it!

A granola tip. I never stir my granola, I press it down firmly in the pan and bake at 300 for about 30 minutes. I then let it cool completely before doing anything with it. You kind of have to break it up then, but it has lots of yummy clumps that way

I love your comments about the fruit loops and not having food shame. I love people's highlight reels but honestly, I can't afford to only shop at whole foods or buy all organic. And that's okay. I do the best I can and remember that no one gets a trophy for only feeding their family all organic groceries. You children will remember you buying those fruit loops every once in a while and be thrilled at how it's such a treat! Their mama listened to them and loved them and, didn't indulge their every desire but bought the fruit loops lol
