If y’all haven’t already, I reccomend watching his Italy show on Disney+. I was pleasantly surprised because not only does he go into regional cooking and small producers etc he also highlights immigrant populations and how their food intersects with traditional Italian cuisines too. And his enthusiasm for food is infectious.

This isn’t a new phenomenon when it comes to food. For instance in South Asia (and I’m sure elsewhere) British colonialists focused on breeding crops and spices to prioritize size and yield over flavor and climate resilience. This still affects agriculture today. What’s typically grown isn’t the best quality in terms of flavor, and farmers are at risk of having their crops destroyed due to climate change.

He’s so very right about everything. Starbucks standardized there burnt coffee beans ruined espresso coffee worldwide. Chain restaurants followed soon after. Even those that dress themselves up as high end. They all aim for the same taste profiles. What’s the point in travelling to a different place if just eat the same thing you would at home? Where’s the adventure and experience coming from? Even if you don’t like the place you have a story from it.

I love cooking for friends that enjoy food. I know some people have genuine allergies or have to cut out certain foods but it has become stupid. It’s now more complicated to cater to so many food requirements when just cooking a dinner for guests. You basically have to go out to eat so everyone can get what they want. I really think this is more of a North American thing.
