    Grandma Exie’s Sweet Potato Pudding (JG version)

    Ingredients:
    – 4-5 sweet potatoes
    – ½ stick butter
    – 1 tsp cinnamon
    – ½ tsp ginger
    – ½ tsp allspice
    – ½ tsp nutmeg
    – ¼ tsp cloves
    – 1 tsp vanilla
    – 2 tsp salt
    (Mom adds 3 cups milk and 2 eggs, Jen doesn’t 🤷🏻‍♀️)

    Directions:
    1. Peel sweet potatoes, cover with water. Boil, then simmer until tender. Drain.
    2. Preheat oven to 350℉
    3. Mix sweet potatoes with spices, (I use the recipe to start and then add more 😬).
    4. Pour into a buttered baking dish.
    5. If you added Mom’s eggs and milk, you’ll bake for an hour. If not, just heat through. 🙋🏻‍♀️
    6. Add marshmallows and watch closely until browned. Yum.

    1. Being from Louisiana, growing up my mom made sweet potato pie instead of pumpkin pie. Now I make it too and two things – (1) it is very easy to cook sweet potatoes in the microwave, let them cool just a bit, and spoon it into a bowl. (2) I use buttermilk instead of plain milk and it adds a very great flavor to the finished pie.

    2. I don't know why Pat would live all the way in WV. They are known for their incense with family members, making meth labs, and people like Pat throwing their waste in the woods for the bears to eat. Smh

    3. Jennifer wouldn't it be nice to do vertical farming with mini dwarf fruit trees or even use the pruning to grow 🌾🌳🌴 didn't it look pasteurize or freeze dried , pemmican type of ways

    4. You know what'd be a great movie? Following Elektra's storyline through the Deadpool and Wolverine movie, I mean, what's her story? Making awesome sweet potato Pie (pudding) for Gambit and X-23? Perhaps.

    5. I’m a grandma but my grandkids call me Lolo. 😅. When I make this I measure NOTHING. I bake the sweet potatoes. Peel them, put them in a mixing bowl. Throw in some butter, brown sugar, and cinnamon. Whirl it up. Put in the casserole after test tasting. Bake for 15 minutes and then add the marshmallows

    6. When a recipe calls for mashed sweet potatoes, I always roast the raw sweet potatoes in the oven at 400 degrees and check them for doneness after 1 1/2 hrs. Once they are done, I take them out of the oven and let them cool for a little bit before I peel all of them and put them in a bowl…it's a lot easier to do it that way (for me anyway hahaha)

    7. I make some pretty good Protein cookies with a baked sweet potato, ripe banana, oatmeal, dark chocolate chips, mesquite flour, and an egg. Some un-sweetened coconut and raw unfiltered organic honey give them a nice boost. Cheers, Jack
