    1. Eva Longoria’s hot chicken salad with artichokes and slivered almonds looks amazing!! As someone who doesn’t care for celery, I might try diced zucchini or water chestnuts as a substitute. 😊

    2. The recipe l use to make Italian wedding soup has you pour beaten egg into the broth. It makes these tiny ribbons of egg (you can’t taste) but it gives the broth a rich flavor that is missed if you skip the egg.

    3. I just gotta say that I get so many great ideas from these videos, Nicole! Eva's salad recipe is going to be on the menu this week. Think I'll top with scallions and maybe add some cayenne and black olives.

    4. The chicken curry reminds me of how I cooked my haddock and rice back in the day. I sauteed celery and onions in a lot of butter, added rice to it. Curry powder, s & p, broth and chunks of haddock and baked in a covered casserole. I haven't made it in decades lol. Haddock used to be cheap.

    5. The Tucci looks good. I agree about all the pans!. Make it all in one pot on the stove. Escarole soup, Italian wedding, what have you 🤷 I make the tiny meatballs with flavored bread crumbs, egg and parm and drop them raw into the simmering chicken broth. Add orzo near the end and more parm to serve. I love escarole soup.

    6. Made the chicken n rice curry with your suggestion of 1/2 the rice. Excellent! So easy and great tasting. Also made Chuck’s enchiladas. Also excellent! My wife went back for a second helping! Rarely happens. Thx so much!!!
