    Saffron Farro with Seared Bay Scallops, Leeks & Tarragon Butter
    Ingredients:
    * 1ยฝ cups dry farro
    * 1 pound bay scallops or sea scallops
    * 2 leeks, white & light green parts, sliced thin
    * 1ยฝ cups clam juice
    * 1ยฝ cups chicken or veggie stock
    * โ…“ tsp saffron threads
    * 5 Tbsp unsalted butter
    * ยฝ cup dry white wine or vermouth
    * 3 Tbsp fresh tarragon leaves
    * 1 lemon, zested and juiced
    * 1 Tbsp neutral oil (grapeseed or olive)
    * 2 garlic cloves, minced
    * 1 tsp salt
    * 1 tsp white pepper
    .
    Directions:
    1. Warm clam juice and stock together in a saucepan over low heat. Add saffron threads and steep for 10 mins until broth turns deeply golden and smells fragrant.
    2. Add farro to your KitchenAidยฎ Grain and Rice Cooker. Follow the prompts and pour the saffron broth over the farro – it will tell you exactly how much!
    3. While the farro cooks, melt 2 Tbsp unsalted butter in a wide pan over medium heat. Add leeks with a pinch of salt and cook slowly, stirring occasionally, until soft and silky, ~10 mins. Add garlic and cook 1 more min. Pour in white wine and let reduce by half. Set aside.
    4. When grain cooker finishes, fold farro into leek pan over low heat, stir to combine. Add 2 Tbsp unsalted butter, lemon juice, zest, and most of the tarragon. Taste for salt.
    5. Pat scallops completely dry (critical for a good sear!) Season lightly with salt and white pepper. Heat oil and remaining butter in a separate skillet over very high heat until butter just stops foaming. Add scallops in single layer and DO NOT TOUCH THEM. Bay scallops 45โ€“60 secs total, tossing once. Sea scallops 90 secs per side. Golden outside and barely set in the center.
    6. Spoon farro into shallow bowls; nestle scallops on top. Finish with remaining tarragon and lemon zest.
    7. YUM!

    1. From one cat mama to another, must remember that they own us , not the other way around. Cats rule the castle.
      Cru is an amazing restaurant. Their parsnip hummus is delicious. Iโ€™m still trying to find a recipe to duplicate it.
      I read Five Star Weekend and am looking forward to watching the show.

    3. My daughter and I enjoyed the show so much. Most of the women had fairly natural faces and I canโ€™t tell you how much we appreciate that. Normal people who are the viewers want to see normal faces! Adore you Jennifer!

    4. Jennifer, I did see the box of stock on your counter at the beginning of the video. One, make your own stock, I promise itโ€™s worth it. Two, have me over to show you how to make sea scallops. You have a beautiful product to work with, do those scallops justice! ๐Ÿ˜˜

    5. I'm allergic to delicious shellfish however I love your kitty. He looks and sounds like my Misty who's 18. However the vet told me she was/is a longhair Siamese. So we may never know the truth.

    6. Sorry watching the show sheโ€™s talking about and I hate it. I love Jennifer Garner love everything about her but this show is so beneath her. Itโ€™s so trashy the way sheโ€™s talking in it and itโ€™s just gross.

    7. My go to salad: this salad made my skin ๐Ÿ’ฏ softer and I lost weight with it. Spinach kale romaine garbanzo beans roasted corn edamame cranberry broccoli sweet potato almonds. The dressing is xvoo and balsamic vinegar
