Gluten-free Rolls!? #scrappycooking #zerowaste #sustainable



These were even better than I imagined, and I want to try and make a dessert version with cocoa powder!

This recipe comes from my friend Carleigh over @plantyou in honor of her new cookbook which was a New York Times # 1 bestseller last week!

Her book is full of plant-based and zero waste recipes and I’ve linked it in my bio if you want to check out a copy. I loved her first book, and am anxiously awaiting my copy of this one in the mail!

The recipe is pretty rustic but you only need two ingredients.
– leftover mashed poatoes
– cornstarch

Instructions:
1. gradually add cornstarch into your mashed potatoes until an easily moldable dough forms
2. Roll into balls and place on a greased cookies sheet
3. Bake at 400 for 20-25 minutes (I used my air-fry setting)

*optional, brush with olive oil and add salt on top.
